End-grain wood boards are the absolute best for maintaining your knives and significantly increase their edge life. The knife edge cuts parallel to the wood fibers on an end-grain board, allowing the wood to self-heal and reduces the abrasion on the knife edge. End-grain wood cutting boards are also excellent for food safety - typically exceeding plastic boards. The wood pulls in and kills bacteria, and if allowed to dry in between uses is one of the safest types of cutting surfaces.

Other than a good knife, a good cutting surface is one of the most important pieces of equipment in a kitchen and we highly recommend going with an end-grain wood design for your cutting boards if you care about maintaining a sharp edge on your knife as long as possible. End grain boards are the most difficult to construct and are the best boards available for the majority of cutting tasks and situations. The deep handle notches on the sides of these boards make these easy to move around for washing and the small rubber feet keep the board from sliding on slick countertops or from having to place a damp cloth under them.
