Notes: 179g. 49mm deep. This source of cocobolo is a little less variable in coloration, smooth, dark and rich. We really like how the maple burl contrasts with the cocobolo on this piece.

Handle: Integral western two-tone cherry burl handle with leather and piano key spacers.

Notes: 164g. 53mm deep. This fantastic piece of cherry burl is an even mix between sapwood (yellow tones) and the heartwood (pink/reddish tones) and has a high level of curl and variation in grain.

Notes: 155g. 51mm deep. This highly-burled piece, dyed black, is almost overwhelming with its complexity and detail. There is not a square millimeter of this handle that is subtle upon close inspection.

Notes: 171g. 54mm deep. A piece that seems to have an unearthly glow from the inside, we love the red streaking in the grain and the contrast of the sapwood. One of Katy’s favorite handles in the sale (look at the other side and the top of it).

Handle: Octagonal integral maple burl handle with cocobolo and leather spacers.

Notes: 142g. 48mm deep. One of our favorite uses for cocobolo is as a spacer and accent material to give the handle visual depth. To me (Luke), this is one of the most pleasing handles of all of the knives in this sale. It’s rich but subtle and looks good from a distance with the contrasting materials or with close inspection.

270mm Cherry Burl Sujihiki

Handle: Octagonal integral cherry burl handle with leather and copper spacers.

Notes: 185g. 37mm deep. Just a bang-up piece of highly-burled cherry. Because it is predominately sapwood, this piece of cherry burl has a lot of yellow and orange tones. It will look better and better as the heartwood portions darkens over time, increasing in contrast. Cherry, especially when aged, looks awesome with copper.

Handle: Octagonal integral cherry handle with leather and brass spacers.

Notes: 134g. 43mm deep. Sometimes, while we love burl, our favorite pieces are ones like this where there is subtle grain, but also beautiful variation in color and visual texture. I (Luke) love the flag of sapwood curling into the back of the handle as well. This piece of wood came from right at the edge of a burl where the straight grain transitions to the burl itself.
