9.25" Cocobolo Damascus Deep Chef

Blade: 52100 & 15n20 Pinstripe Damascus @HRC 65.

Handle: Integral western cocobolo handle with leather and bronze spacers.

Notes: 254g. 58mm deep. I (Luke) love this sapwood cocobolo and how the grain waterfalls into the Damascus on this guy.

Sources: Cocobolo - Twin Lakes, Michigan.
Bronze - cymbal, old drum set, Athens, Ga.

Price: $2400

8.25" Maple Burl Damascus Deep Chef

Blade: 52100 & 15n20 Damascus @HRC 65.

Handle: Integral western maple burl handle with leather and copper spacers.

Notes: 177g. 54mm deep. Random Damascus is classic and one of our favorite patterns because it goes so well with burl woods and looks like you could read it like a topographic map. I also love how from the top on an integral bolster you see all the lines compress and flow into the spine of the knife. One of the more pleasing details to my eye.

Sources: Maple - Wolfskin, Ga.

Price: $2150

195mm Spalted Black Maple Damascus K-tip Gyuto

Blade: 52100 & 15n20 Pinstripe Damascus @HRC 65.

Handle: Octagonal integral spalted black-dyed maple handle with leather and bronze spacers.

Notes: 154g. 46mm deep. Pinstripe Damascus shows the forging process and how the steel moved quite well and has a crisp simplicity and modern aesthetic. Love it with this Ambrosia spalted black-dyed maple.

Sources: Maple - Wolfskin, Ga.
Bronze - cymbal, old drum set, Athens, Ga.

Price: $2050

195mm Chestnut Burl Damascus Gyuto

Blade: 52100 & 15n20 End-Grain Damascus @HRC 65.

Handle: Westernized octagonal integral chestnut burl handle with leather and copper spacers.

Notes: 185g. 50mm deep. Sometimes end-grain Damascus reminds me of a stream or river with fast current in the middle flowing out to the tip and the quieter water near the spine and edge. To me the simplicity of this pattern is a big part of its beauty and flow.

Sources: Chestnut - Balsam Design Company, Black Mountain, NC.

Price: $2000

7.5" Cherry Burl Damascus Chef

Blade: 52100 & 15n20 Damascus @HRC 65.

Handle: Westernized octagonal integral cherry burl handle with leather and fiber spacers.

Notes: 160g. 46mm deep. Black and white spacers are one of my favorite additions to Damascus integral bolster knives. The dark steel and rich red tones of this cherry burl make the spacer array really pop. Cherry burl darkens with age and exposure to light and this handle will deepen and become richer with age. Also, I like how the handle darkens and becomes more burled toward the end of the handle. A particularly nice piece of wood to pair with this random Damascus.

Sources: Cherry - Athens, Ga.

Price: $1900

185mm Black Maple Burl Damascus Gyuto

Blade: 52100 & 15n20 Damascus @HRC 65.

Handle: Integral western black-dyed maple burl with leather and copper spacers.

Notes: 160g. 49mm deep. A low contrast dark etch on this blade paired with the black dyed maple burl makes for a dark, subtle, but richly detailed look that I really like. Also, as the copper oxidizes it will turn a reddish purple that will add to the moodiness.

Sources: Maple - Wolfskin, Ga.

Price: $1900

175mm Cocobolo Damascus Nakiri

Blade: 52100 & 15n20 End-Grain Damascus @HRC 65.

Handle: Octagonal integral cocobolo handle with leather and fiber spacers.

Notes: 199g. 53mm deep. One of my favorite wood/Damascus pairings that we’ve done lately. The flow of the cocobolo grain into the Damascus of the bolster and blade is nearly perfect. Simplicity and richness of natural wood grain is expressed across the whole knife. Also, that white spacer accents without taking away from the overall feel. Love the lines, sharp angles of the octagonal handle and nakiri shape, and the rustic nature of the wood grain and forge finish.

Sources: Cocobolo - Twin Lakes, Michigan.

Price: $1850

170mm Maple Burl Damascus Santoku

Blade: 52100 & 15n20 High-Layer Twist Damascus @HRC 65.

Handle: Integral western maple burl handle with leather and copper spacers.

Notes: 172g. 49mm deep. High and low-layer twist Damascus patterns are really fun to match with wood grain and I love how the back 1/3 of the maple burl creates a sweep that moves up and forward in an arc that combines back into the waterfall rush of the Damascus forward of the bolster. It’s almost a sweeping rainbow arc of a paintbrush from right to left. To me this is the most aesthetically playful knife in this lineup with its rich natural color palette.

Sources: Maple - Wolfskin, Ga.

Price: $1850

240mm Heart Pine Damascus Sujihiki

Blade: 52100 & 15n20 End-Grain Damascus @HRC 65.

Handle: Octagonal integral heart pine handle with leather and bronze spacers.

Notes: 183g. 38mm deep. Heart pine and end-grain. . . need I say more? The double bronze spacers make the heart pine really sing on this guy. I also like how the Damascus pattern falls into the tip of the blade.

Sources: Heart pine - Water's Edge Woods, Athens, Ga.
Bronze - cymbal, old drum set, Athens, Ga.

Price: $2000

8" Spalted Redbud Damascus Slicer

Blade: 52100 & 15n20 Wide-Band Damascus @HRC 65.

Handle: Octagonal integral spalted redbud handle with leather and brass spacers.

Notes: 139g. 33mm deep. This pattern is the same as Pinstripe, but forged rotated 90 degrees. Really like how the bold islands and rivers of the pattern go with this bomber piece of spalted figured redbud.

Sources: Redbud - Athens, Ga.

Price: $1800

3.5" Maple Burl Damascus Paring

Blade: 52100 & 15n20 Damascus @HRC 65.

Handle: Westernized octagonal integral maple burl handle with leather spacer.

Notes: 48g. 22mm deep. Sometimes simple Damascus patterns with a subtle dark etch really turns the eye back to the handle. Love how this particularly light piece of maple burl almost glows in contrast to the blade. The reversal of the more typical dark handle and bright blade really catches the eye.

Sources: Maple - Wolfskin, Ga.
